Warm Quinoa & Veggie & Feta Salad

Ingredients:

  • ½ cup of quinoa
  • 2 cups leafy green vegetables
  • 2 small beetroots
  • 2 small zucchini
  • 250g pumpkin
  • ½ cup of walnuts
  • 40g feta cheese
  • thyme leaves
  • pinch of salt

Serve as 2 main, 4 as side dish

Method:

Preheat oven  to 200 ̊C or 180 ̊C. Cut  beetroots, pumpkin and zucchini  into wedges and place them on the tray. Top with thyme bake for 30 min. Cook quinoa following packet directions. Combine all ingredients – quinoa, pumpkin, zucchini, beetroots, leafy green vegetables and chopped walnuts into a large bowl. Drizzle with feta cheese. Enjoy :)
