Chocolate & Coconut Avocado Macarons

Ingredients:
  • 1 avocado, ripped
  • 1 banana
  • 1/2 cup shredded coconut
  • 1/3 cup coconut or almond milk
  • egg
  • 1/3 cup cacao powder
  • 1/2 cup walnuts
  • 1/3 cup maple syrup
Filling:
  • half avocado, ripped
  • 2 tbs cacao powder
  • 2 tbs maple syrup
Instructions:
Preheat your oven to 200C. Blend avocado, banana, walnuts, shredded coconut together in a high speed blender. Add egg, coconut milk and maple syrup and continue blending until everything is well blended. Drop spoonfuls of dough on a baking sheet and half of them top with walnut. Bake for 20 to 30 minutes or until the macaroons are firm. To make the filling blend all ingredients together until smooth. Sandwich macaroons with the filling and enjoy :) Store in the fridge.
