Bacon & Egg Muffins

Hmmm. Bacon! Do you like your bacon and egg brekkie?

Try this healthy and delicious variation!

Ingredients:

  • 4 tbs coconut flour
  • 4 eggs
  • 200 g organic bacon, chopped
  • 1/4 cup feta cheese
  • 1/4 cup ricotta
  • 1/2 cup spinach leaves, chopped
  • 1/4 tbs baking powder
  • pinch of pepper
  • pinch of salt

Instructions:

Preheat oven to 200C. Mix eggs and ricotta in the large bowl.  Add the rest of ingredients into bowl and stir until well combined.  Pour the mixture into muffin cups (approximately 9). Make sure to only fill 3/4 full. Bake muffins for 20 minutes or until the top of the muffins are golden brown and enjoy :).
