I guess I already miss Bali!
When we were in Bali last year our friend showed us a small family restaurant at Balangan beach with the best (I mean it seriously) banana pancakes I’ve ever ate. This year we came back there and nothing changed. They are still delicious!
So I let myself be inspired and here is a healthy gluten free and dairy free version of banana pancakes. It’s very simple and easy to make. The combination of protein and carbohydrates will keep you full and give you energy you need to tackle your day. As a bonus maca powder will boost your mood, support your immune system and balance your hormones.
- 1 banana, peeled
- 2 eggs
- teaspoon of maca powder
- handful of coconut flakes
- teaspoon of coconut oil
- 1 lime
- drizzle of honey
Heat a large non-stick fry pan over medium heat and melt teaspoon of coconut oil. Mash up banana in a large bowl. Whisk eggs and add to banana paste. Pour the mixture into the pan, sprinkle with coconut flakes and fry until golden.
Serve with fresh-squeezed lime juice and drizzle of honey. Enjoy :)!
