Right, another raw cheesecake recipe!
I just love it. It’s a perfect treat for summer days! Easy to make and so delicious!
- 1 cup of walnuts
- 1 cup of medjool dates, roughly chopped
The cheesecake mixture:
- 1 cup of cashews (pre-soaked 2 hours and then completely drained)
- 1 cup frozen berries
- 2 tbs coconut oil
- 1 tbs honey
- coconut flakes
- fresh berries
Place walnuts and dates into your food processor or blender and pulse until finely chopped. Line a muffin pan with paper cases (9). Press crust evenly down into paper cases. Place cashews, berries, coconut oil and honey into your food processor or blender and blend until completely smooth. Divide the mixture over your crust into paper cases. Top with fresh berries and coconut flakes. Place in the freezer for at least four hours. Enjoy :).
