Yesterday evening I felt like “I would like to bake something”.
So I checked the cupboard (I always have shredded coconut and raw cacao powder there, because I just love them :)) and decided to make very simple banana bread.
We had it for breakfast this morning and it’s so delicious. So moist and filling! Yum!
Gluten and dairy free!!
- 1.5 cup coconut flour
- 2 cups coconut milk
- 2 eggs
- 1/3 cup honey or maple syrup (optional)
- 5 tbs raw cacao powder
- 2 medium ripped bananas, chopped
- handful of shredded coconut
- coconut oil in spray
Preheat oven to 200°C. Spray a loaf pan with coconut oil. Combine coconut flour and milk in the large bowl. Add eggs, cacao powder and honey or maple syrup into bowl and stir until well combined. Pour the 1/3 of mixture into loaf pan, arrange one layer of banana slices on it and top with another 1/3 of mixture. Then arrange second layer of banana slices on it and top with the rest of the mixture. Top with shredded coconut. Bake for 30-40 minutes. Serve with your favorite fruit. Enjoy :).
