Raw Carrot Cake

Carrot cake!

Nourish yourself with raw, healthy and so delicious version of this favorite cake.

  • gluten free
  • dairy free

Ingredients:

  • 3 mediums carrots
  • 1/2 cup almond meal
  • 1 cup dates
  • 1 cup dried pineapple
  • 1/2 cup shredded coconut
  • 1 teaspoon cinnamon
  • 1 cup walnuts

Icing

  • 2 cup cashews
  • juice from 1 lemon
  • 2 tbs liquid coconut oil
  • 1/3 cup maple syrup
  • water (as needed)

 

Instructions:

Chop peeled carrots, walnuts, dates and pineapple into small pieces. Put all ingredients in the food processor and blend it until everything is well blended and stick it together. Press the cake mix into pan. To make icing blend all ingredients in the blender until smooth and spread it on cake mix. Top it with walnuts. Store it in the fridge. And enjoy :).
