Chia Seed & Coconut & Berry Mini Pancakes

Coconut pancakes


List of ingredients:

  • ½ cup chia seeds (soaked)
  • 2 eggs
  • 1 cup shredded coconut
  • ½ cup blueberries
  • 1 cup strawberries
  • 1 tablespoon of organic nut butter
  • 1 tablespoon of organic maple syrup or agave nectar
  • ¼ cup walnuts
  • 1 teaspoon of coconut oil

2 serve


Combine soaked chia seeds, eggs and shredded coconut in a bowl, whisk to combine. Heat a large non-stick fry pan over medium heat and melt teaspoon of coconut oil. Pour spoon of pancake batter into the pan, make a circle, and cook 2-3 minutes until golden , turn the pancake over gently and cook for another minute. Spread nut batter on pancake and place them on serving plates. Top them with berries, walnuts and drizzle over maple syrup or agave nectar to serve. And enjoy :).
