Ricotta & Vegetable Cake


This delicious salty cake is full of vegetables and lean protein. You can serve it as a main meal or even as a yummy snack.


  • 1 medium zucchini, grated
  • 1 carrot, grated
  • 2 shallots, chopped
  • 2 garlic clove crushed
  • 1/4 pumpkin, grated
  • 1/4 cup natural seeds (pumpkin, pine etc.)
  • salt
  • pepper
  • 1 tbs coconut oil
  • 1 tbs baking powder
  • 4 eggs
  • 125g ricotta
  • fresh parsley, chopped
  • fresh oregano, chopped


Preheat the oven to 200 degrees. Combine all dry ingredients in a bowl, then add eggs and coconut oil and mix. Pour into a greased bread tin and bake for about 30 minutes or until top is just golden. Enjoy :).
