Silver beet & avocado & chick peas & feta salad

Silver beet, also known as a Chard, is related to spinach and has high levels of magnesium, calcium, vitamin K, iron, potassium, vitamin A, folate (folic acid), zinc, copper, vitamin C, dietary fiber, and vitamin E. Enjoy this delicious warm salad and load your body with essential vitamins and minerals.

Ingredients:

  • 2 cups fresh silver beet leaves
  • 1/2 medium red onion
  • 1 cup mushrooms
  • 1/2 cup chick peas
  • 1/2 cup cherry tomatoes
  • 1/2 medium avocado
  • pinch of salt
  • your favorite herbs
  • coconut oil in spray

Instructions:

Spray oil on pan and heat it. Cut the mushrooms into halves and chop red onion. Stir-fry them for 5 minutes or until golden. Cut silver beet leaves into smaller pieces and steam them. Chop avocado and cherry tomatoes. Place steamed silver beet leaves on the plate with mushrooms and onion. Add cherry tomatoes, chick peas and avocado. Season with salt and herbs. Toss to combine. Top with feta cheese. Enjoy :)
