Tofu & Veggie Stir – Fry


Do you love thai food? I do :) This is a healthy option of my favorite tasty dish with no added fat.


  • 300 g organic firm tofu (in honey – optional)
  • medium zucchini
  • 150 g sugar peas
  • 2 cups broccoli
  • small red onion
  • 1 cup mushrooms
  • 2 tbs soy sauce
  • pinch of chili
  • coconut oil in spray
  • cup brown rice (dry)


Boil brown rice in rice cooker or pot. Place tofu on a plate lined with paper tower. Stands for 10 minutes. Pat dry and cut into smaller pieces. Cut and slice vegetable and mushrooms. Spray oil on pan and heat it. First stir-fry tofu for 2-3 minutes or until golden and crisp. Add vegetable and mushroom and soy sauce and stir-fry for 3 minutes or until tender and crispy. Add chili. Place on plate with brown rice. Enjoy :)
