Zucchini muffins

The combination of veggies, healthy fat and protein is a perfect solution for your mid-morning and mid-afternoon slumps!

It will provide you all the energy you need and it’s gluten, dairy and sugar free.

It’s so easy to make in less than 10 minutes.

Ingredients:

6 muffins

  • 2 medium zucchini, grated
  • 4 eggs
  • 4 tbs coconut flour
  • pinch of salt
  • pinch of pepper

Instructions:

Preheat oven to 220C. Mix all ingredients in one large bowl until well combined. Pour the mixture into muffin cups (approximately 9). Make sure to only fill 3/4 full. Bake muffins for 30 minutes or until the top of the muffins are golden brown. Top with fresh parsley. Enjoy :).
